Thanks for the tip! I found that this is very likely what happened. The temperature in the room I fermented in was too low. It needed at least another week before bottling most likely. I’ll probably be investing in a hydrometer next time.  The reasoning behind the chilling in the fridge longer is that supposedly the gases mix back into the fluids easier at cooler temp.
